Chocolate Cake - Instant or Traditional

Chocolate desserts go way back to the 18th century when Dr. James Baker made the first chocolate cake by mixing ground cocoa beans with a cake mixture. Conrad Van Houten of Netherlands also developed his own version of baking chocolate cakes using cocoa butter from cacao liquor. The Swiss were not to be beaten and invented their own system of mixing chocolate with cake batter in a more efficient way.

People could then enjoy chocolate as dessert instead of just something delicious to drink. In the 1930's the Duffy Company of Pittsburgh introduced the instant Devil's Food Cake Mix. Duncan Hines and General Milling also followed suit and produced their own versions of instant dessert mixes.

Instant chocolate mixes enjoyed decades of popularity and everyone started baking cakes with prepared commercial mixes for their kids and parties. Nowadays, people are beginning to appreciate cakes made from scratch with fresh ingredients. It can be difficult but not impossible to find people who can bake pastries the old traditional way because we grew up in the instant cake mix generation.

Although difficult, you can still find a few pastry chefs and home based cooks who still bake cakes the traditional way.
